I really think if you did a subdued, touching version of THE DANCE by Garth Brooks that it could
be incredible. Get it right and there won't be a dry eye in the house when you finish.
Or maybe SIMPLE MAN by Lynard Skynard, Shinedown made a version of that you might want to check out.

I don't listen to a whole lot of country but I do love these two and I have no doubt you could do
great justice to either of them, prefferably THE DANCE.
