I'd make my home-made lasagna, garlic bread, and a salad. Throw in the romantic candles as well. Of course, I'd have to make hubby leave and take the kids away for the weekend LMAO

My first thought: I'd make... reservations. Don't want to kill the poor boy with my cooking!
But then I thought, he's probably getting tired of eating out all of the time. So I'd have a couple of steaks ready to grill, baked potatoes, and a salad (more for me - he said in one interview he doesn't really like salads). Of course, HE would have to do the grilling - I tend to burn things on the grill.
The lights would be down and we'd eat by candlelight. Not only would that set a romantic mood for the evening, but maybe he wouldn't notice the dust that has been settling since I have been neglecting my household chores to spend hours on end on this forum.

Ooooh, I love cooking on my grill, so I'd probably make him something like...
Tendeloin
Baked potatoes
Grilled Pineapple
Then for dessert...
Dutch oven Peach Cobbler! Served HOT with tons of Vanilla Ice cream!
And I have a small fire pit in my back yard...so we'd top it off with sitting around the fire, roasting marshmallows.
(Then pray I don't poison him, or embarrass myself! My yard is moderate, not nearly as impressive as I'd like it to be! lol)

I would find out what he thought his mom cooked best and be sure to NOT make that. Can't compete with mom...
I'd probably keep it simple but tasty and keep the cooking to a minimum b'c of the heat here in the south.
Beer + margaritas
Mixed green salad
Some sort of grilled meat or seafood like tequila lime chicken, skewered shrimp, etc.
Fresh, homemade creamed corn
Homemade key lime pie or panna cotta

For starters, I'd make a tossed salad with a red wine vinaigrette dressing. The main course would be grilled jumbo shrimp ("jumbo shrimp" - there's an oxymoron if there ever was one) and scallops, rice pilaf, and veggies (green and yellow squash). That would go well with a nice white wine. Finish with a refreshing berry sorbet.

I would make him whatever he wanted! I would ask "David, what do you want for dinner?"
Then he'd say, "I want blahblahblah."
And I'd make it!
